I was out in Arathi Highlands picking herbs when a level 35 gnome warrior challenged my level 80 death knight to a duel; because of the level difference any of my attacks would have taken all her health away which would have been pointless, so instead I clicked on my Aracanite Dragonling and let the dragonling and the gnome fight it out.

I tested a level 39 vs a level 60 training dummy and it is true
that the higher level opponent will dodge or parry any "normal" attack. However there are some attacks that can't be parried or dodged.
My guess is that the Warrior was using her "Overpower" ability.

Instantly overpower the enemy, causing weapon damage. Only useable after the target dodges. The Overpower cannot be blocked, dodged or parried.

Given the level difference between the Arcanite Dragonling and the Warrior, the dragonling should have been dodging (or parrying) all of the warrior's other abilities so her "Overpower" ability should have been available throuhgout almost the entire fight (because Overpower is "Only useable after the target dodges"); which it evidently was, considering the amount of damage the Aracnaite Dragonling had taken during the fight [as seen in its health bar (0:55) near the end of the video].
