Matcha tea is a green tea that's full of antioxidants, so it's good for your health and it's delicious. But the best part is, you can use it to give old recipes a new twist. One to try is this matcha chia seed pudding. Watch holistic nutritionist Kelly LeVeque of Be Well By Kelly show you how to make it.
Open one can of coconut milk and take the first 4 tablespoons off the top. Put it in a bowl and set aside for later. Add the rest of the can and the other can to a blender. Add 1/2 an avocado and 4 tsp matcha powder and blend.
Pour mixture into a bowl and add 3 tbsp chia seeds. Cover bowl with plastic and place in the fridge. Stir after 30 minutes and place back in fridge. Let sit overnight or for at least 2 1/2 hours.
For the whipped cream, add 6 drops of Stevia and whip until fluffy. Serve matcha chia seed pudding with a dollop of whipped cream and enjoy.
