At the heart of all Cochon555 events lies a culinary competition of five local chefs each presenting one whole, heritage breed pig to promote local family farming. Running in tandem for two seasons, is a national "Somm Smackdown” competition featuring 50 of the nation's top sommeliers. Each contestant faces the challenge of pairing the best wine to dozens of dishes prepared by the competing chefs. A panel of 30 celebrity judges select a winner.
Cochon555 is the most recognized food and beverage tour in North America and over the course of 10 months they execute live-events with hyper-local chefs cooking heritage breed pigs from family farms. Since the first event almost ten years ago, the tour has aligned with notable sommeliers, reputable industry professionals, barrier-breaking winemakers, tons of wine collectors and influential media. Our wine program includes education through the an inspiring video series called “Somm Smackdown” featuring our close friends who live on the frontline of the wine industry.
HOW IT WORKS
In each city, Cochon555, invites five  premier Sommeliers / Wine Professionals to participate in the “Somm Smackdown”. Participants are asked to submit one  case of wine that will be judged by notable judges. The judges are made up of local and national media, celebrity chefs, sommeliers, food champions, local farmers, retailers and restaurant wine directors. The judges select the winner based on its comprehensive and wide-range ability to pair with all the dishes prepared by the  competing chefs, in short, the best wine across-the-board paired with heritage pig cooked by five chefs will win.
What will the chefs be cooking? Based on the competing chef’s restaurant signature-style of cuisine, taking into consideration the background of the principle competing chef, and the characteristics of the breed of pig they are provided, Somms select a region, varietal and a tasting profile that gives them the best chance of winning.
SERVING THE WINES AT COCHON555
Following the voting process, all  wines selected for the Sommelier Smackdown are offered as samples on the main floor at the “World of Wine” table. This allows trade and consumers of the event to experience.
