【材料】:鳳爪1斤、豆鼔1大匙、薑1塊、蒜仁3粒、乾辣椒5小段、花椒粒10粒、青蔥3支、炸好紅辣椒10支、滷包1包
【做法】:
1、把炸紅辣椒切泥、蒜切末、蔥切末備用。
2、雞爪去爪,先從腳掌直劃一刀、再從大姆指處橫切一刀、直接去骨後再對切。
3、去骨雞爪放入鍋中川燙至八分熟後起鍋瀝乾水份。
4、把雞爪放入油鍋過油炸後撈起,轉大火後再把雞爪回鍋再炸起鍋瀝油備用。
5、起鍋加油後,先放蔥下去炒香後,再加入花椒、紅辣椒末、蔥、薑末一去拌炒,接著再放入豆豉拌炒再加入水,轉大火燒滾。
6、等湯汁燒滾後再把雞爪放入,再加入酒調味。
7、等湯汁快收乾時放入糖、香油、蔥花即完成「鼓椒鳳爪」。
