This Apple Blueberry Skillet Cobbler is an easy country style dessert that's made and served in a single skillet which makes for easy clean up. Cobblers are a good choice over cakes and cookies for dessert since the main ingredient is fresh fruit. The crumbly sweet biscuit top adds a perfect contrast to the warm syrupy fruit on the bottom.

Ingredients list 3 apples, peeled and diced 2 cups fresh blueberries ½ cup water ¼ cup granulated sugar 1 tbsp cornstarch ½ tsp apple pie spice 1 tbsp diced butter FOR THE SWEET BISCUIT TOPPING 1 ¼ cups gluten free Bisquick ¼ cup dark brown sugar, firmly packed 4 tbsps cold butter diced 1/3 cup milk 2 eggs, slightly beaten 1 tbsp sugar mixed with a pinch of cinnamon (to sprinkle on top)
