Very carefully. First you need Coconut Palm Trees. Climb up and cut chunks off the coconut flower (in over 40 years of travel, I had never even noticed the coconut flowers on Palms...duh..) Many pieces of bark go into a vat, boiled into a liquor juice. Strain and switch to a giant wok where this mixture is stirred and boiled for hours.

Pour the thick, carmel looking mixture into pans. Let harden and cut into pieces and you have a very sweet, toffee tasting, sugar. Thai people actually prefer coconut sugar over sugar cane sugar. If you happen to live in a Coconut Grove, start your own family business.
