KOHLRABI VEGETABLE SOUP - KARALÁBÉ ZÖLDSÉGES LEVES is a favourite of mine - I would say it ranks among the top three favourite soups after chicken and goulash soup. This is a cream based soup with the tender kohlrabi julienned along with other fresh garden vegetables like carrots, parsley root and onions. This recipe uses a modified Roux as the vegetables are sautéed, flour is sprinkled and then the milk is added to form the base of the soup. Kohlrabi is very tender and delicious.
