Making Olive Oil with Fattoria Lavacchio
Here we have the processing of the olive oil. To start, all of the olives are collected and brought to the Mill. Freshness is key to quality olive oil so we produce our olive oil as quickly as possible. After handpicking all of the olives, the first step in the production is to clean the olives. Here we see the olives being cleaned. Afterwards the olives are sent to be pressed. keeping the olives below 24 degrees celsius is critical to preserve the health benefits of the oil. Next the pulp is sent to a centrifuge, a large rotating chamber. The chamber spins up to 2000 rpm and allows an efficient and healthy separation of liquid and solid. Lastly the water and the oil are separated here you see the water being filtered out. Finally the rich Oil is filtered and ready for bottling.
