Busy-Day Quesadilla

Quick, easy and healthful

Ingredients:

For each quesadilla:

1 whole wheat tortilla

Shredded cheese, Monterey Jack is a good choice

Chopped vegetables on hand, such as onions, peppers, roasted veggies (potatoes, sweet potatoes, carrots, brussels sprouts, broccolie), grilled veggies

Black beans, if desired

Leftover meat, chopped

1/2 of an avocado, sliced


Directions:

Lay tortilla on work surface. Sprinkle cheese generously over half of the tortilla. Layer with vegetables, meat, beans and top with sliced avocadoes and a little more cheese. Fold empty half over the filled half. Place on heated non-stick pan over medium heat. Cook until brown on underside. Turn over to brown.

Transfer to work surface and cut into 3 traingles. Serve with a bowl of soup, fresh fruit.


Sue's Tips:

You'd be amazed how delicious sliced, roasted brussels sprouts are folded into the quesadilla. Be adventuresome and use a variety of vegetables in the quesadilla.
