Rachel Khoo came up with an awesome way to use up old/stale Swedish buns: cut them in half, wrap them around ice cream and smother with caramel sauce. [She's a genius].

Not only is this recipe totally lip-smackingly tasty, it is also her "easy, cheat dessert," which you can pull out really quickly when you're in a dessert crunch.

Rachel lives in Sweden now, hence the inspiration for her newest cookbook, "The Little Swedish Kitchen." Her cookbook is gorgeous, beautifully written and jam-packed with recipe you will want to make.

Here are the quantities of ingredients for the Cardamom Bun Bombe from her cookbook:

200g golden or date syrup
200g caster sugar
2 tsp ground cardamom
1/2 tsp fine sea salt
300ml double cream
2 litres good-quality vanilla ice cream
12-14 shop-bought cardamom or cinnamon buns
