Many professional athletes are recognizing the performance benefits of going gluten free. Professional tennis player, Novak Djokovic, had a breakout season he attributes to eliminating gluten from his diet.

Gluten:
-Gluten is a sticky protein molecule found in wheat, rye, barley, and other grains.
-Gluten is difficult to digest and highly allergenic.

Statistics:
-1 out of every 133 people have celiac’s disease, which means they cannot digest gluten at all and will develop a severe, allergic reaction after consuming gluten.
-1 out of every 7 people are gluten intolerant, which means they have allergic-like reactions after consuming gluten.
-Most people today are unable to properly digest gluten because most gluten is not prepared properly.

Sprouted Grains:
-Sprouted grains, like Ezekiel Bread, are easier to digest and do not contain phytic acids.
-Phytic acid is found in most grains today and blocks vitamin and mineral absorption.
-When consuming grains, it is best to consume only sprouted grains in moderation.
