The world is turning to tofu- as a healthy food for the now, the new, and the next generation. eMase has developed a new cheese-like tofu which contains much less water. Although it doesn't taste like cheese, it has been named such because it is only 10% water while conventional tofu is 60%. Mase's tofu has a meat-like texture which isn't lost even if it's frozen. In the US, this machine is already being used by major tofu manufacturers but in the future it is hoped that this new cheese tofu will become more popular and be used as an alternative to meat. Mase is currently exploring the value of this tofu as a frozen food product. The compact tofu machine produces silky tofu by using bittern and soy-milk.
