Salmon fishcakes make a tasty change from the usual flavourless white mush in breadcrumbs of regular fishcakes, and also from the fabulousness of a Yorkshire fishcake. I made these because I'd bought a bargain pack of salmon offcuts, but you can also make them with canned salmon. Salmon is an oily fish, packed with omega-3 oils, and really good for you.
