I personally use the pea method when mounting the heatsink onto the CPU. Whether the spread method will create air bubbles or not, I would not recommend it. The reason is simply. The base of the heatsink might not be entirely flat and if so, it creates air gaps between the CPU's heat spreader and the heatsink base. The spread method is not able to fill up the air gap.
