We introduce Victoria to the show, she introduces our audience to Vegan Cannoli.
Recipe: Vegan Cannoni (8-10 Canolli)
Cannoli Shell
1 cup All Purpose Flour
2 tsp Sugar
Pinch salt
Pinch cinnamon
1 Tablespoon chilled Earth Balance
1 Energy-g "Egg" (1 1/2 tsp egg replacer mixed with 2 Tablespoons water)
2 Tablespoons Apple Cider Vinegar
2 Tablespoons Water
1 tsp lemon zest
1 Quart canola Oil (for frying)
-Combine all dry ingredients into a medium bowl
-Cut up chilled Earth Balance into small pieces
-Work your butter into your dry ingredients, gently rub mixture between your hands until your mixture resembles sand or cornmeal. This is called a "Cut-in Method".
-In a separate bowl, combine all wet ingredients.
-Make a small dent in the center of your dry ingredients, pour wet ingredients into the center of your dry.
-Gently fold together with rubber spatula until dough forms.
-Wrap with plastic and chill for 20 minutes.
-While your dough is chilling, heat your oil in a heavy bottomed pot
-Bring your oil to 360 degrees Fahrenheit
-After dough has rested for at least 20 minutes, dust a clean surface with flour.
-Roll out your cannoli shell dough to 1/8 inch thick.
-Use a round cutter, that is at least 4 inches in diameter, and cut out your cannoli dough into rounds. Set aside.
-Keep dough covered with plastic to prevent drying
-Wrap your dough rounds onto your cannoli forms. Using a small amount of egg replacer "Egg", glue the seams of your shell.
-Flare out the edges of your dough, so oil can penetrate your shell and allow easier removal from the cannoli form.
-With metal tongs, place your prepared cannoli form and shell into hot oil.
-Fry until a deep golden brown. About 4 minutes.
-Remove shell from oil, allow excess oil to drip off shell.
-Using a clean towel, grip your shell gently with one hand and grip the metal form with the tongs in your other hand. In a rotating motion, gently work the shell from the form.
-Set aside and let shell cool completely.
Classic Vegan Cannoli Filling
8 oz Tofutti cream cheese (room temperature)
1/2 cup vegan powdered sugar (sifted0
1 tsp vanilla
1 TBS lemon zest
1/4 Cup roughly chopped vegan semi sweet chocolate
1 Pastry bag
-Gently fold in sifted powdered sugar into soft cream cheese
-Add remaining ingredients and gently fold into mixture.
-Place mixture into pastry bag and chill until ready to use.
Finishing the Cannoli
-Pipe generous amount of filling into each cannoli shell.
-Sprinkle ends with semi sweet vegan chocolate and finish with a light dusting of vegan powdered sugar
