Here’s what you’ll need: • 1 Florida Grapefruit, segmented • 2.7oz extra virgin olive oil • Salt to taste • Pepper to taste • 3.5oz walnuts • 2.2kg cooked large shrimp • 3 heads or romaine lettuce baby cos lettuce, leaves separated • 1 bunch watercress, leaves picked
Follow these steps to learn how to make this seafood salad recipe:
Step 1: Segment the Florida Grapefruit.
Step 2: Create the salad dressing by mixing the extra virgin olive oil, salt and pepper.
Step 3: Preheat the oven to 170C or 350F.
Step 4: Toast the walnuts by spreading them across a baking tray and roasting in the oven for about 10 minutes or until crisp. Set aside to cool.
Step 5: Place the Florida Grapefruit segments, watercress leaves, cos leaves, shrimp and walnuts in a large bowl.
Step 6: Toss the salad with the dressing just before serving.
