Make Jolene's Country Blueberry Butter Cake!
Jolene's Country Blueberry Butter Cake is a simple recipe that uses Fresh Blueberries!
It goes great with Coffee or Hot Cocoa and perfect for Coffee with friends!
This Buttery Soft Cake is iced with a Butter Sugary Glaze and is great warm too!
Serve it at your next Coffee Party or on a Buffet!
Simple Ingredients and preperation make it easy for anyone to make!
Jolene's Blueberry Butter Cake
You'll Need : 1 Cup All Purpose Flour 1/2 TSP Baking Powder 1/8 TSP Salt 3/4 Cup Sugar 1/3 Cup Butter (melt it, then cool it a bit) 3 Large Eggs 1 TSP Vanilla Extract (I add more) 1 Cup Fresh (or Frozen) Blueberries
How To: Preheat Oven to 350 Degrees Grease a 9 Inch Pie Pan, Make a liner for bottom with Wax Paper, Grease Paper, Dust With Flour, tap out excess.
It's better if you sift, but if you prefer the dump all :
Beat Sugar and Butter until light and Fluffy, Add Eggs one at a time, beat in Vanilla. Add Baking Powder, Salt, then add Flour Slowly. Blend until Smooth. Spread Batter out in prepared pan, Smooth Top, Sprinkle with Blueberries. Bake cake 35-40 Minutes Cool, Loosen cake with knife, Turn Cake over, removing Wax Paper. Ice as desired.
