鮮蝦腐皮卷

食材:
新鮮草蝦仁200克、韭黃1把、香菜1小把、荸薺6粒、腐皮3張、豬肥膘油丁、麵粉、薑1小塊

調味料:
白胡椒粉、糖、鹽、美乃滋

做法
1.備料:草蝦拍成泥狀、韭黃切末、香菜切末、荸薺拍泥狀、腐皮裁剪成三角狀、薑切末。

2.取一水晶碗,放入荸薺末、韭黃末、香菜末、薑末混合拌勻。

3.取一水晶碗,放入蝦泥、少許鹽、少許糖(鹽糖等量)、胡椒粉、豬油丁、少許麵粉一起抓醃拌均勻,再加入步驟2拌料一起混合。

4. 以腐皮將內餡包起,用麵糊(麵粉加少許水調成湖)沾黏封口。

5. 起冷油鍋,將腐皮捲冷油下鍋,完全下完腐皮捲後再開火,邊炸邊滾動腐皮捲,避免四周先焦熟,腐皮膨脹起炸至金黃後即可撈起濾油,斜切擺盤,最後擠上美乃滋提味即完成。
