Grape harvest with Fattoria Lavacchio

One of the most critical steps in wine making is the harvest. The grapes are analyzed throughout the season to determine the best time for harvest. The best harvest sees the grapes at a close balance of acid and sugar. Here we harvest the grapes by hand. This allows us to pay careful attention to the quality of the grapes and assures minimal damage while harvesting. Each bunch is cut from the branches and placed into a large case. Our harvest traditionally occurs from mid September until Mid October. From here the cases are loaded onto a tractor and transported for destemming and fermentation.
