Raw Kale Salad with Peanut Butter Dressing with Strawberries and
The best way to eat kale, with peanut butter and strawberries.
4 cups thinly sliced dinosaur kale
1/4 cup lemon juice
1/4 cup extra virgin olive oil
1 teaspoon Celtic Sea salt
1 red onion, thinly sliced
1/2 cup chunky peanut butter
1/4 cup rice or coconut vinegar
1/4 cup agave
3 tablespoons Bragg's or coconut liquid aminos
2 cups sliced fresh strawberries
1/3 cup Goji Berries
In large mixing bowl, whisk together lemon juice, olive oil, and sea salt. Add sliced kale to wet mixture.
Massage the wet ingredients with hands or use a tong to work kale into the wet mixture until kale wilts. Mix in sliced onion; set aside. In medium mixing bowl, whisk together peanut butter, rice or coconut vinegar, agave, and Bragg's or coconut liquid amino acids. Pour peanut butter mixture onto prepared kale
and mix well. Toss in strawberries and Goji berries.
Yield: 10, ½ cup servings.
