Destemming and fermenting with Fattoria Lavacchio

The first step towards fermentation is destemming. The crates of harvested grape clusters are dumped into a large machine called the destemmer. The grapes are separated from the stems and filtered out, they then go through a 'soft crushing' seen here. The soft crushing starts to break the grape down into liquid. they are then pumped into vats for fermentation. The stems are pushed out of the other end and collected, they will be used later for compost. Finally the grapes are ready for fermentation!
