Chef Shuji Hiyakawa Introduces "No Soy Sushi" Each Sumptuous Piece is Custom Designed and Hand Dressed.

You know the routine so well by now: sidle up to the sushi bar or settle in to a table at your favorite Japanese restaurant; order the fresh, succulent sushi or sashimi you've been craving since you decided to go out for raw fish; then pour your soy sauce and wait for the fish, pickled ginger and wasabi. When the bounty arrives most sushi lovers add a small marble of wasabi to the soy sauce to create a murky, spicy soy bath and begin dunking each piece before biting. Whether you top each piece with ginger, eat the ginger between bites to cleanse your palate, or even dunk your ginger, we're all guilty of the routine. Well, Ooka's chef Shuji Hiyakawa is revolutionizing the way his guests eat sushi. He's taking their soy, ginger and wasabi away — and diners are loving every bit, er, bite of this.

Introducing No Soy Sushi — seven pieces of custom designed, hand dressed sushi, each with ingredients that compliment the natural flavors of the fish and dazzle the taste buds of the diner. Striped Bass is dressed with Yuzu paste and fresh lemon. Salmon is brushed with a mustard miso. Kanpachi is painted with Ponzu and topped with jalapeño. Yellowtail is seared then dotted with a Yuzu liquid gelee. Sea Eel is adorned with citrus zest and eel sauce. Tuna is topped with tofu sauce and fresh wasabi. And Chu-toro is seared and dressed with sesame soy sauce, and topped with fresh ginger.

No Soy Sushi is available for lunch or dinner for $22. Diners that aren't quite ready for chef Hiyakawa's progressive approach to marrying flavors can still order sushi, sashimi and Ooka's signature maki rolls complete with soy sauce, pickled ginger and wasabi.
