Some H.264 encoding settings can cause jittery flash video playback on Mac computers. Until Adobe and Apple get things worked out, you can fix the problem by disabling hardware acceleration on your flash player. Instructions in the video.
Update: After more testing and separate Hardware Acceleration issues, I now think the issue is not between Apple and Flash, but H.264 decoding and Nvidia graphics cards.
