2 boneless, skinless chicken breasts
6 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
1-2 tbsp dijon mustard
juice from 1/2 a lemon
1-2 tbsp fresh chopped herbs, like parsley

1. Cut chicken into small cubes and place in a medium bowl.
2. In a small bowl, combine olive oil, vinegar, mustard, lemon, and herbs. Whisk until combined and creamy.
3. Pour dressing over cubed chicken and gently stir until combined.
4. Serve chicken over a green salad or a piece of sprouted grain toast or keep covered in the fridge to let the flavors meld even more. Can be kept for a couple of days.
