Rachel Khoo shares her delicious bruschetta using roasted pumpkin, feta cheese and bacon.

Smashed roasted pumpkin bruschetta

Makes 4

Preparation time: 15 minutes
Cooking time: 15 minutes

Ingredients:

200g roasted pumpkin
100g feta cheese
4 slices of bacon
4 slices of bread
Salt
Pepper
Handful of chives, finely chopped


Method:

Rub the bread with garlic then place the bacon and bread under a hot grill. Continue to grill until golden.
Remove from grill and rub the garlic clove on both sides of the bread.
Smash the pumpkin and spread on top.
Crumble on the feta and bacon.
Drizzle olive oil and garnish with chives
