Our grocery budget was very tight this month, so we did a lot of "eating down" of what was in the pantry & freezer. Day 1: Thai Chicken and Rice Soup (http://tinyurl.com/7ljml5t), asparagus, & Cast-iron Cornbread (http://tinyurl.com/76exghw) Day 2: Fish sticks & Solyanka (http://www.bigoven.com/recipe/166156/...) Day 3: Frozen pizza & salad, Carrot cupcakes (http://tinyurl.com/84pvz7v) with cream cheese frosting Day 4: Linguine & clams, broccoli, & Mike's from-scratch chocolate cake with chocolate frosting & mint filling (from Better Homes & Gardens Cookbook) Day 5: Black-eyed peas, cheese grits, butternut squash, sauteed veggies Day 6: Green curry with tofu & eggplant over rice *The cornbread & cupcakes were both Pinterest-inspired recipes.
