Beef Wellington is an absolute classic British dish (okay, the French also claim it in its Boeuf en Croute impostorishness). Lean, tender and massively expensive beef fillet is coated in mushroom duxelles, wrapped in flaky pastry, and baked. If it's done right, it's glorious. Other versions of this recipe include a layer of crepes (to stop the bottom from going soggy), and others also add paté. I don't think either of those things are necessary, although Gordon Ramsay does. The basic dish, beef, mushrooms and pastry, ticks all the boxes for me.
