It was actually Jim Carrey's idea to have Cannibal Corpse in Ace Ventura: Pet Detective. He is a huge Cannibal Corpse fan and thought it'd be great if the band appeared in the film, so he requested them to be in it.

According to their drummer the only reason they were featured in the movie is because Jim Carrey is a fan of death metal music and specifically wanted them to appear and when the band had to back out because they had a European tour scheduled the producers actually moved the day of filming so the band could still fly to Miami & shoot the scene.

Deleted scene probably because in test screenings, this amount of death metal was not enjoyable to the general public. Jim carry probably pushed for this scene to get in the movie, and the producers probably had to cut it. CC is barely in the theatrical release sadly.
