This is an easy way to lauch a small boat from a boat trailer with just one person.

What I do to get my boat on trailer is to head toward the bank next to the trailer and pull the motor up and float to the bank. I then pull out my rope and push the boat toward the back of the trailer... I installed walk boards down the center of my trailer to the axel...I can walk out up to my knees in the water on the board and pull it right up on the trailer... Just don't want to push too hard or it will pull you off the walk boards... I learned that leason hard.. LOL
how stable are these boats? good for fishing with up to 4 ppl?
I do it similar but without walk boards. Back trailer in; my boat is either tied at the dock or beached next to the ramp, in either case I just give the boat a good shove out into the water with the rope in my hand and then pull the boat back in until it contacts the trailer. I can usually pull it by hand about halfway onto the trailer, then engage the winch and winch it the rest of the way. I get in the water up to my knees but no higher. 2 minutes start to finish, tops. 
This is exactly what I do. IMHO if you can't launch your boat by yourself, don't take it out!
This is a good way to launch it... but the hard part is getting it on the trailer on a shallow ramp with one person. And you do not want to wade into the water to your knees. What's needed is a way to guide the boat on to the trailer with the side guides and then get an attachment to the front of the boat and pull it up on the trailer. That's the real problem to figure out! And an electric motor lake with a bow motor leaves you with no easy way to pull the boat on the trailer.
