Lancashire Hotpot is a simple but delicious oven-baked stew of mutton or lam, potatoes and onions. It comes from the north-west English county of Lancashire, and dates back several hundred years. The long slow cooking makes the meat really tender, and the slices of potato on top crispy and crunchy. It's very easy to make and well worth the wait for it to cook.
