Ingredients:
crust
2⅔ cups (12 oz) AP einkorn flour
1 tsp salt
10 Tbsp extra-cold butter, cut into small cubes
½ cup ice-cold water
filling
1 lb skin-on Granny Smith apples, cored and cut into ½" slices
⅓ cup sugar
1 Tbsp fresh lime juice
2 Tbsp cornstarch
pinch of salt
2 Tbsp unsalted butter, cut into small pieces
cinnamon
glaze
1 egg, well-beaten and diluted with water (for egg wash)
1 Tbsp apricot preserves
1 tsp hot water
