Professor Zachary Nowak takes students from the Umbra Institute's Food Studies Program to meet world-famous butcher Dario Cecchini. Cecchini, in his butcher shop/restaurant, offers the "Whole Cow" meal, with delicious (and sustainable) dishes made not just from the steaks and tenderloins.The second stop was the Azienda Agricola Montefioralle winery in Chianti, where students participated in a winetasting of several vintages of Chianti Classico. The field trip is one of the Program's many excursions to learn firsthand about Italian food culture. (Video by Nicola Palumbo)
