It's all about the experience in Les Schee's business. How does it look? How does it smell? What does it feel like? What does it taste like? And most important, what's the story behind every glass of wine.

Thirteen years ago, Schee opened The Wine Experience in downtown Ocala so that he could share his enthusiasm for wine and spread the experience of the beverage to local wine lovers.

"We wanted our business in the name," the 48-year-old connoisseur said. "We want people to come here and learn about the wines and use their senses. You taste wine with all the senses."

Although Schee's degree is in advertising, he has been in the wine business since he graduated from the University of Florida in '85. When the economy didn't offer Schee a promising future in communications he turned to a friend who was opening a restaurant.

"I always had a love for wine," he said.

And that opened the door for him to begin a career as a wine rep and later as a wine shop owner.

The unique thing about wine, Schee said, is that it is different from any other beverage. Wine is an ever-evolving product year after year depending on what Mother Nature gives the wine maker.

"There's only one harvest a year," he said. "That's all they have to work with, and once it's gone, it's gone."

The intimate experience with nature that comes with drinking a glass of wine is what Schee truly appreciates about the subject of his passion.

"Wine is about the earth," Schee said. "That's the allure of it. Anyone can knock back a shot, but can you enjoy the history of it? Can you appreciate the art of it's production?"
