Aapam in (Tamil and Malayalam) appa in [Sinhala) is a very popular pancake from “Nasranis”(Syrian Christians) of Kerala
Appams are specially made in a small kadai called as “aapa chatti” using a well fermented batter made of rice and toddy, it is cooked in its own steam, covered and generally served with Ishtu[stew], kadala curry or egg roast.So let us see how to make Aapam

Ingredients [for 2-3 persons] :
1.Rice 100 Grams
2.Parboiled Rice 100 Grams
3.Coconut Water
4.Sugar 10 Grams
5.Coconut milk 50 ml

In a bowl add rice, parboiled rice, water and soak for 2-3 hours then in a mixi jar add the soaked rice with some water and grind into a smooth paste
Now take some coconut water and add the batter into it and mix, now add sugar and ferment for 8-10 hours
In the fermented batter add some coconut milk, salt and mix
Heat the aapam chatti and wipe with oil and pour the batter in middle and spread the batter around it and cover for 2 minutes
Now the tempting soft aapams are ready
Serve with egg roast or vegetable istoo or kadala curry
