Famed cocktail maker Tony Conigliaro explains some of the scientific equipment he uses in the creation of port based cocktail, Master at Arms.

Serves one

50ml dark rum
60ml port
5ml grenadine

Simmer the port on a low heat (reduce by two thirds).

Add the other ingredients and serve hot or cold.
