Kami has in cooperation with the Surimi School and Dr. Jae Park developed a new and very efficient way to test the quality of the fish paste. The new state-of-art machine is called RAPSA (Rapid-Accurate-Portable-Surimi-Analyzer. Fast cooking for better value. This testing is needed in order to improve the curing process, since different kind of fish need different curing. Before this cooker, this was a slow and thus costly process but with the new Kami cooker the testing can be done very fast.
