Bacon and eggs is a simple yet delightful breakfast. But it can look a bit plain. There's nothing wrong with that, of course, but I decided to do a posh version of bacon & eggs. So the egg in this video is cooked in two parts - I show you how to do confit egg yolk, and the white is simply poached. My bacon is marinaded in golden syrup and cooked sous vide to make a kind of candied bacon - the bacon is then briefly seared in a hot pan to finish it off. The other main element of my posh bacon n egg breakfast is homemade brown sauce, similar to HP sauce or Daddies sauce. My brown sauce is rich and fruity, combining sweet and sour ingredients.

So, if you want to produce a spectacular breakfast, get out your sous-vide machine! Confit egg yolks are thick, creamy and very eggy. Candied bacon is sweet and tender with just a bit of crispiness on the outside. And homemade brown sauce is wonderful!
