All you need to do is get some good flour and relax, let time do the hard work ;)
Remember, source your ingredients, find a local miller who produces stone ground flour.

Recipe:
1000g flour
700g water
20g salt
Tiny bit active dry yeast

Oven temperature: 250C or 480F
