Make Your Own Buffalo Wings

I don't normally have a set amount for each ingredient. I usually season foods to suit my taste. But below is a batter that works well for any fried food. You can double up on this, or even triple, depending on how many you plan on making.

(Batter) In one mixing bowl add:

1 cup all purpose flour
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika

Mix the above ingredients together.

Lightly coat all of your chicken with seasoned salt.

Put batter in a ziploc bag and add a few pieces of chicken at a time and shake to lightly coat.

After chicken is lightly coated, put wings on a plate and cover and place in refrigerator for 30 minutes to an hour.

Heat oil to 375 and fry chicken until brown and you can't really hear it frying anymore. When you can't hear it, that is normally (sometimes) indicative to whether its done or not.

Once you remove chicken from the oil, drain excess oil onto a paper towel.

Buffalo Sauce

Melt about 2 tablespoons butter.

Add the melted butter to about a half cup of hot sauce.

Add about 1 teaspoon of garlic powder and 1/2 teaspoon of black pepper.

Mix it all together. Then add about 1 tablespoon of celery flakes and 1 teaspoon of parsley. Then mix everything together again.

And it's done! Taste the sauce. If its too spicy, add more melted butter.

Then just pour it all over the chicken. Or if you wish, you can heat the sauce first (not necessary).
