This used to be part of my commute for a few years. I hope it doesn't make you dizzy ;)
There are three ways to start recording video with Glass: 1. Speak "ok, glass", "record a video", 2. Press the button by the eye for a couple of seconds, 3. tap the touch pad once (to show "ok, glass" screen), then twice (to enter "activities" menu, then slide backwards until "record a video is highlighted, then tap to start recording. In all cases the default clip length is 10s. To record longer tap once. To hide the video (which could potentially be distracting while driving, tap or slide to bring up options for sharing etc. -- the command screen covers the video).

I felt safe recording this while driving. For me it's less distracting than answering a phone call on a headset.
