Eggplants? For breakfast? So many people don't know what to do with eggplants and so many people don't know what to eat for breakfast. Well there is a plenty you could do with both. Today I am exploring the intersection of eggplant and hash browns. Hashbrowns are my favorite real breakfast and post-party breakfast item. Because of the starchy nature of eggplant, I saw know reason why it couldn't be thrown into the rave.

Eggplant Hash Browns (Hashbrowns) Recipe

Ingredients:

2 tablespoons vegan butter
1/2 onion, diced
1/2 green bell pepper, diced
1 potato, peeled and chopped
1/2 large eggplant, peeled and chopped
salt, pepper, basil to taste

Directions:

Heat a large skillet over medium high heat. Add in 1 tablespoon vegan butter to melt.

Once the skillet is hot, sauté the onions and bell pepper until soft.

Add in the potatoes and the rest of the vegan butter. Allow them to cook for a minute or two before adding in the eggplant.

Season the hash to taste. I am using salt, pepper, and basil.

Cover and cook for about 15 minutes. Return every 5 minutes to stir.

Serve to your sleepy heads with ketchup if you dare.
