Always a crowd favorite, these Chicken Lettuce Cups are flavored with Asian sauces and ingredients...and of course taste absolutely awesome. I like to use thigh meat for the chicken, which I buy whole and chop in a food processor. The meat gets minced and when cooked stays moist and tender.
I sear the chicken off is a very hot pan, to get some crispy edges, and then use a combination of hosin, sesame oil, ginger, to add a sweet, savory flavors. I'll then finish the chicken with some pinenuts for a texture contrast, and some lime juice and cilantro to brighten up the flavors. It's a perfect combination of contrasts, with sweet, heat and savory flavors, and crunchy, chewy, and soft textures. Perfect for a party or a light meal.
