Recipe: Roasted Asparagus with Herb and Almond Brown Butter
Chef: Iccha Devi Ra
1 lb Fresh Asparagus
1 cup smoked Almonds, Roughly chopped
4 T Sweet Cream Butter
Approx 10 Fresh Basil Leaves
2 cloves of Garlic (Crushed)
Extra Virgin Olive Oil
Preheat oven to 350 degrees Fahrenheit.
Spread clean and trimmed asparagus in a single layer on a cookie sheet. Drizzle with olive oil, salt, and pepper. Roast in the oven for about 15 minutes or until they reach desired tenderness. Remove from oven and set aside. In a large skillet over medium heat, melt the butter and add about 1 tablespoon of olive oil. Add 1 teaspoon of pepper, the garlic and the almonds. Let this warm through over low heat for 5 minutes. Chop the basil and set aside. Add the asparagus to the skillet and toss to coat with the butter. Remove to a serving platter and top with the basil.
Recipe: Chocolate Bliss Brownies

Yield: 30 average-sized brownies
½ lb sweet cream butter
½ lb Salted butter
1 ¾ bags of semisweet chocolate chips
13 oz semisweet chocolate- I like to use the Trader Joe's Bittersweet Chocolate Bar (it takes 32 squares)
6 large eggs plus one egg yolk
3 T. instant espresso powder
3 ½ T Vanilla Extract
1 ½ cups of sugar
¾ c dark brown sugar
1 T. of your favorite coffee finely ground
1 T. unsweetened cocoa powder
3 shakes of Vietnamese cinnamon
1 cup plus 3 T. all purpose flour
1 T. baking powder
1 t kosher salt
2 ½ c. toasted chopped hazelnuts (Walnuts can be substituted)
1 huge bowl
1 medium bowl and saucepan to melt your butter and chocolate
1 small bowl for the dry ingredients
1 13"x18"x1½" baking sheet pan
In a double boiler, melt the butter, the bittersweet chocolate, and ¾ bag of chocolate chips. Let this mixture cool.
In largest bowl, stir together:
eggs, espresso, vanilla, sugars, coffee, cinnamon, and cocoa powder; then add the chocolate mixture.
In small bowl, add:
1 c flour, baking powder, salt; stir together and add to the chocolate mixture.
In small bowl, add:
nuts, chips, 3 T flour; toss to coat with the flour.
Fold this into the chocolate mixture and pour into the buttered and floured pan.
Put in 350 degree Fahrenheit oven and bake for 15 minutes.
Remove and carefully tap on the counter to release air bubbles, then put back into the oven for 15 more minutes or until a cake tester comes out clean. Let cool completely!
