You may not see lionfish on a lot of restaurant menus, but one new eatery in New York City is trying to change that. Norman's Cay, which takes its name from an island in the Caribbean, now offers the fish, which is an invasive species that is decimating the native wildlife and coral reefs. If the public can develop a taste for the fish, it may help create demand and control the population. It's a valiant cause, so good thing that it's also a tasty fish.
