Bacon Explosion Surprise
12 pieces of long thick bacon
1 to 1½ pounds of sausage
Choice of seasoning
Choice of stuffing
Set up the base of your Bacon Explosion by laying out six pieces of bacon into a tight square and weave the other six pieces into the square like youre making a basket. Sprinkle the seasoning on your woven mat of bacon.
Place stuffing on top of the sausage and roll it into a loaf. I used three different types of stuffing: sausage links, pepper jack cheese and an olive salad. Once the sausage is molded into a small loaf on top of the bacon roll both back toward you, enclosing the sausage in the bacon. Place on a grill and cook for 3 hours between 250 degrees and 300 degrees. Remove from the grill, let rest and cut to serve.
