I prefer making Aaloo Sabji (potato fry) with raw potatoes as it gives the sabji a crispiness and softness at the same time. This sabji is great with puris and rotis.

Ingredients

Potatoes (medium) - 9
Oil - 2 tbsp
Onion (medium) - 2
Ginger - 1 inch
Green chili (small) - 3
Curry leaves - few
Cumin - 1 tsp
Corriander - 2 tsp
Chili - 2 tsp
Salt - to taste
Garam masala - 1 tsp
Sugar - 1 tsp
Finely chopped fresh coriander - 2 tbsp
