Mascarpone is a light Italian cheese. It is said that the name is deducted from the Spanish word masquebueno, which means better then good. This apricot pie is partly being made with mascarpone. The apricots I bought fresh, but in different times of the year you can also use apricots from a can. Make sure you leave them to leak out before using them.
