http://RadaCutlery.com - How to make scallion brushes. Using the Rada Regular Paring Knife Chef Jere demonstrates making scallion brushes out of scallions. This is a fun garnish for any dish to look professional. Use green scallions for best use. After making the scallion garnishes put the scallion greens into ice water to help it expand.

Now we are going to be using the Rada Regular Paring Knife. This knife is great for every day uses around the kitchen. Today what we are going to do is make some scallion brushes. These are really fun to use and actually garnish Rada's Cheddar Broccoli Soup Mix. We start with the scallions; I like to buy a bunch. There is six to eight in a bunch. We want to cut off the end, the root part.

Then we are going to cut out right about where the grain is just starting. Then we are going to take the tip of the knife and about an inch and a half in just start cutting until is starts fanning into a brush, real little thin strips. Do this on each side. Then we want to place them in ice water. Ice water will also make it brushed out and actually look like a brush. This is the end product, a great garnish for jut about anything.
