Chef Davide Oldani directs his own one Michelin starred restaurant D'O just outside of Milan. Known for his creative approach to dishes and his use of in-season high-quality ingredients, he refers to his cuisine as being "pop", better explained as haute cuisine at accessible prices. His signature dish? Caramelised onion, Grana Padano Riserva D'O hot and cold, a perfect balance between contrasts: sweet and salty, crunchy and soft, warmth and cold.
