Staffordshire Oatcakes are somewhat like a pancake, quickly cooked on a griddle or frying pan and served hot with (usually) melted cheese, bacon and/or other fillings. Staffordshire Oatcakes should not be confused with the Scottish ones, which are small, solid, and more like a biscuit or cookie. Staffs oatcakes are very popular in The Potteries, the polycentric city centred on Stoke-on-Trent, and home to many famous pottery companies such as Royal Doulton, Wedgwood, Spode and many others. I wouldn't say that Staffordshire oatcakes are easy to make - the yeasted batter needs fermenting and must be bubbly to make a successful oatcake. Cooking them can be a bit tricky too - spread the batter too thinly and it will fall apart. Too thick and it won't roll properly.
